Seasonal fruit cake with ricotta


Löysin vanhasta Delicious-ruokalehdestä hedelmäkakkureseptin, jota piti tietysti kokeilla, nyt kun just on luumut, persikat ja nektariinit parhaillaan. Kakku tehdään pellille, joten se on helpoista helpoin tapa saada satsi isommallekin porukalle. Taikinaan tarvitaan 200g margariinia, 400g sokeria ja neljä teelusikallista vaniljasokeria. Ne vatkataan vaahdoksi ja lisätään kuusi kananmunaa yksitellen vatkaten samalla. Sen jälkeen lisätään 500g ricottaa. Lopuksi vielä 350g jauhoja, joihin on sekoitettu 3tl leivinjauhetta. Taikina kaadetaan pellille (mun uunipelti on hiukan syvempi ja pienempi kuin sellainen peruspelti, mitä tulee uuneissa mukana) leivinpaperin päälle. Taikinan päälle pilkotaan hedelmälohkoja sekaisin (persikkaa, nektariinia ja luumua). Paistetaan 180 asteessa reilut puolisen tuntia. Kun kakku on jäähtynyt päälle voi lusikoida vielä kuorrutusta, mikä tehdään 150g tomusokerista ja tilkasta vettä. 

Ricotan sisältämän laktoosimäärän vuoksi en uskaltanut itse syödä kuin pienen haarukallisen, mutta testaan seuravaksi, mitä tapahtuu, jos sen sijaan laittaa melkein saman määrän jogurttia. Uskoisin, että tulee ainakin melkein yhtä hyvää.

* Edit: Sori, unohdin, että viimeiseksi taikinaan lisätään vielä yhden sitruunan kuori raastettuna. Ja toinen huomio vielä, jogurtti toimii, mutta koska se on ohuempaa, sitä ei voi laittaa ihan yhtä paljon kuin ricottaa...

I found in an old Delicious magazine a fruit cake recipe that I just had to try as all plums, nectarines and peaches are just at their best. This one is made on an oven tray so it makes huge amount of pieces just at once. The dough goes like follows. Whip 200g of margarine, 400g sugar and 4tsp of vanilla sugar until fluffy. Add six eggs, one at the time. Add 500g of ricotta. Shift 350g of flour and 3tsp of baking powder. Add to the dough. Pour it on the oven tray covered with baking parchment. (My tray is slightly higher and smaller than the standard one that comes with the oven.) Wash and cut plums, nectarines and peaches into wedges and place them on the dough. Bake in 180 Celsius degree for bit more than half an hour. Once the cake has cooled, mix 150g of powdered sugar with bit of water and use a spoon to spread it on the cake. (I made some stripes.) It did taste good, but because of that ricotta and all the lactose it contains, I did not dare to eat more than one testing bite. 

Next I am planning to make the same with yoghurt and see whether it works out, too. I don't think anything can go wrong with that either... 

Edit: I'm sorry I forgot that one needs to add grated peel of one lemon as the last incredient to the dough. The second remark, I tested the recipe with yoghurt. It was fine, but since the texture of yoghurt is somewhat more watery, one should use bit less of it...
